DOUBLE CHOCOLATE COOKIES.

I have been looking a long time for a double chocolate cookie recipe. Every one that I have tried turned out to be dry, and would be stale in a day or two. So I turned to my trusty Mennonite cookbooks and I think I have finally found one that I love and the whole family loves. They are so chewy, and they melt in your mouth!  Sharing is caring, so here you go!  ENJOY!



Double Chocolate Cookies

Ingredients 

1 cup butter
2 cups white sugar
2 eggs
2 teaspoons vanilla
2 1/4 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips


Make it!

1) Preheat oven to 350'F

2) Cream butter and sugars together ( if you are using a Kitchen Aid mixer use your paddle to cream, it turns out perfect!)

3) Add eggs and vanilla, and mix.

4) Add the dry ingredients, and mix well.

5) Add chocolate chips, and mix with a wooden spoon.

6) Drop by teaspoonfuls on cookies sheets, and bake at 350'F for 7 to 8 minutes. I only baked them for 7 minutes, and when I took them out I let them rest on the cookie sheet for 1 minute before putting them on the drying rack.

7) Pour yourself a big glass of milk and ENJOY!
